Possible BUG
Cannot turn off “Label Override” for a new DashLink tile:
After clicking APPLY, it reverts to ON, meaning I’m forever unable to modify/edit the DashLink’s label (so it always reads “DashLink Tile”).
Yep, its a bug and I need to fix that bad boy !! Will be in the next / last beta push before we go into release.

I’ve also noticed this with a normal device tile where I cannot change it back to using a manual label once i’ve enabled the label override to use Attribute Values.

Confirmed. The bug affects all Tiles’ labels. Once overridden, cannot be unset. You can only change the watched attribute.
