Trying to change theme is problematic. Swipe, grab and drag and click don’t work but something does and after a while it will finally change to a different one.
Buy a Mac?

Turns out its a mouse thing. If you have a touch display in Windows 11 it works. So I’m looking at either fixing the mouse/touch issue, or changing the chooser to be more obvious about the left < and right > that’s there that you can click on to switch between themes (they are just hard to see)

Fixed in the next release - put in a better slider/carousel / tested to work in desktop and mobile/tablet
